Penne Pesto Alfredo with Mixed Greens and Goat Cheese Crostini

How many people post their Penne Pesto recipes? Probably a million but the other day I made fettuccine Alfredo and it was so good that I decided to make Penne pesto and mix the sauce of Alfredo with it. Maybe you’ve done it. But all I can say is that when your pasta tastes better then a restaurant you know you succeeded . I have a problem when making pasta for dinner and it’s that I can’t only have pasta, I need something on the side, so I decided to make a mixed green salad with goat cheese Crostini. It was heaven! I promise you, you will finish the salad once you take your first bite!

Yield: 2  Time: 30 Min
Ingredients:
Pasta:
3/4 box of penne regite
Tbsp of olive oil
Tbsp of butter
1 cup of heavy cream
One shallot minced
3 garlic cloves minced
Pinch of nutmeg
1/2 cup of chopped basil*
1/2 cup of freshly grated parmesan
Tsp of salt
* my basil is chopped fresh basil that I cover in olive oil and store in the fridge.
Salad:
Mixed greens
Six slices of baguette
Olive oil for drizzling
Garlic powder
6 slices of goat cheese
Grated Parmesan for the top

Directions:
Step one:
Cook pasta according to directions. In a skillet heat the butter and olive oil and add the minced shallot, after two minutes add the garlic and stir until it is soft and a tiny bit golden. Add a pinch of nutmeg and stir, then add the heavy cream and let simmer for a minute. Add the basil and then the Parmesan and stir until the Parmesan is melted. Mix the sauce with the pasta.

Step two:
Preheat oven to 350. Drizzle the baguette slices with olive oil and garlic powder. Add the goat cheese and grated Parmesan. Place in oven until the baguette is golden brown ( about 3-5 minutes). Toss the mixed greens with the dressing and place the crostini on top.

I am a big fan of basil. That’s why I love Penne pesto, but I also love fettuccine Alfredo so I am really happy that by combining the two recipes I made my two favorite pasta dishes in one 🙂 the nutmeg gives it that homy feeling and the shallots a hint of sweetness. What I love about this dish is that you can see the chopped basil so you know it is fresh. Oh gosh, and the salad…I really thought the pasta would be the highlight of the dinner, but my husband kept commenting on the salad. It is so good, I can assure you that your spouse or family member will be impressed 🙂
