Vanilla cupcakes with butter-cream frosting

I love making vanilla cupcakes. They are so much cuter than regular vanilla cakes, plus they are easy to decorate and small so they serve as a buffet dessert. I like to color the frosting but since everything was pink I had to change things up. I will show you what I did in a video. This recipe is dairy because dairy is way better but you can make it non-dairy. I already made this version non-dairy and the cupcakes were gone, so either way they are good lol.

Yield: 12  Time: 30 minutes
Cupcake ingredients:
1 1/2 cups of flour
2/3 cups of butter or margarine
3 eggs
3/4 cup of sugar
1 tsp of vanilla extract or vanilla sugar

Butter-cream:
1/2 cup of butter
3 3/4 cups of confectioners sugar
4-5 tbsp milk
1 tsp of vanilla
Food coloring
Pastry bag and tip
Toothpick

Directions:
Step one:
Preheat oven to 350 degrees. Line a cupcake pan with baking cups. Beat the butter and sugar together until it is fluffy. Add the eggs one by one. And then add the vanilla and flour and beat until smooth. Pour the batter in the cupcake pan and bake for 20 minutes or until done, and let cool.

Step two:
In the meantime start making the butter-cream By beating the butter until smooth. Then add the sugar, milk vanilla by taking turns until the butter-cream is smooth. Set aside.

Step three:
Open the pastry bag and before putting the butter-cream in, dip the toothpick in the food coloring and make 2 lines along the pastry bags across from each other ( the line should be very thin and may not look like a line but its fine. Once you put the butter-cream you will see the color). Add the butter-cream and frost the cupcakes.

Here is a video of how I frosted mine. I usually start form the outside towards the center but in this case i wanted it to look like flowers so i started by the center.

In addition I also made cake pops and drizzled melted chocolate over them here’s a little video 🙂

    1. Thank you!I make a cake ( with cake mix it is the easiest) and mix in bought frosting until it can form into a ball then i place them in the freezer. I dip cake pop sticks into chocolate then into he balls so they glue together then put them back in the freezer. Then i hold the cake pop and dip it into melted chocolate or candy melts. I turn it over and let it dry. Due to many requests i will make a post about cake pops 🙂
