Crispy chicken Caesar wraps

I used to be so grossed out from wraps because I would buy the already made tuna wraps and they were so soggy ( people like it, not me, lol). I never bought wraps anymore but then I kept watching tv commercials with chicken wraps that had me drooling so I decided to make my own. I’ve made this recipe about 15 times now and it is always a hit. It is just simple ingredients and very easy to do. Sometimes I would grill the wraps before but it really tastes the same so I don’t anymore. Since everything is tender , I needed to add something crunchy, I made crispy chicken breasts and it came out so much better.

Yield: 2-4 Time: 20 min

Ingredients:
4 chicken breasts cut thin
4 mini wraps or 2 big ones
2 eggs whisked
Breadcrumbs
1 avocado diced
Ketchup for spreading
Dijon mustard for spreading
1/4 cup of mayonnaise
1 tbsp of vinegar
2 tsp of sugar
1 tsp of garlic powder
1 tsp of salt
Pepper to taste
Romaine lettuce (optional)
Oil for frying

Step one:
Dip the chicken breasts in egg then in the breadcrumbs and fry them on both side until golden brown, set aside on paper towel.

Step two:
Mix the mayonnaise, sugar, vinegar, salt, garlic powder and pepper in a small bowl. Warm the tortillas or wraps in the microwave for 15 seconds.

Step three:
Spread ketchup and mustard on half of the wrap. Then place the chicken, avocado ( I used to cut slivers but then every time I would bite the whole piece would come out so this way it stays in the wrap), the caesar sauce and pieces of romaine ( optional). Start rolling the wrap holding everything and bringing he two edges towards the inside so nothing slides out. Cut them in half when serving.

I usually serve the wraps with coleslaw or fries and good white wine. The breadcrumbs I use are the Pereg american style golden breadcrumbs. I used many types of breadcrumbs before and these have so much flavor and the chicken comes out so crispy. The caesar sauce I make with garlic powder only, when it is for a sandwich or else I use real crushed garlic. This is my go to dish when my hubby comes home late and I want to make him a good dinner quickly. I hope you enjoy!!
