You can make so many different types of Focaccia . For example I really like the rosemary and thyme one, or with caramelized onions and dried tomatoes. I have never tried a zahtar one and my sister told me all about it. It was homemade pizza night and we decided to make focaccia as well. Focaccia dough is really simple its just a couple ingredients and then its covered in olive oil. I’m not a big fan of oily bread so i made them differently and it tastes exactly the same. Its way more healthy too! Focaccia is a lot like bread so you have to let it rise. I make mine like pizza dough so it doesn’t have to rise and it has that crisp bite to it. Maybe I should call it something else other than focaccia because I am making too many changes to it (lol). Not many people like making focaccia because they spend a lot of time just for bread that looks oily so I figured I would give you a recipe where you can use it for pizza and focaccia and serve it for dinner. I wouldn’t give you this recipe if it wasn’t a success. I made it two times in this past week 😉
Yield: 4 Time: 30 minutes
Ingredients:
Focaccia dough:
2 3/4 cups of flour
Tbsp of olive oil
Tbsp of yeast in 1 1/4 cup of lukewarm water
Tsp of salt
Some sugar ( about a tsp)
Olive oil and zahtar for brushing
Topping:
Handful of Arugula
Diced Cucumbers (optional)
Diced Tomatoes ( optional)
Sliced Goat cheese ( optional)
Cooked mushrooms ( optional)
Cooked spinach ( optional)
pesto for garnish
Drizzle of olive oil
Drizzle of balsamic vinegar
Salt and pepper to taste
Shaved parmesan cheese
Directions:
Step one:
Preheat oven to 425 degrees. Put some sugar in the lukewarm water and yeast then let it stand for 5 minutes. Mix the dry ingredients and then add the oil and yeast mixture. Mix the dough and then knead it.
Step two:
Divide the dough into four pieces. Roll it out until its thin (about 1/2 inch). Brush olive oil and zahtar on it. Place in the oven for 12-15 minutes until its crispy and lightly browned on bottom.
Step three:
When the focaccia is still hot, add the arugula, cucumbers, tomatoes, mushrooms, goat cheese, spinach and Parmesan. Drizzle the olive oil and balsamic vinegar.
This recipe is really easy. Just cut up your favorite vegetables and add it to the arugula on top of the focaccia. It is really good and filling, and also a bit healthy. You can always make this as bread for an appetizer. I made some focaccia and some pizza. One of the pizzas was really good and easy. I brushed some Crème fraîche ( heavy cream) and sprinkled fresh sliced mushroom, minced onions, some grated cheese, and salt (this type of pizza is very french). I really liked this dinner. Prepare the vegetables in advance and you can make dinner in less than 30 minutes. If I keep talking about this recipe I might just make it again tonight 😉
